- For poori
- 1 cup wheat flour
- to taste salt
- 1 tsp oil
- 1 tbsp sooji
- as required Water for making a semi soft dough
- as required Oil for frying pooris
- For masala paste
- 1 inch ginger (chopped)
- 1 tomato (medium size)
- as per taste Salt
- 1/2 tsp turmeric powder
- 1 green chilli
- 1/2 tsp red chili powder
- 1 cardamom
- as required Water
- For aloo curry
- 1.5 tbsp oil
- 1/2 tsp cumin seeds
- 1 dash asofoetida
- as required Prepared masala paste
- 4 Boiled potatoes (diced)
- as needed Salt
- 1 dash sugar
- 1/2 tsp Garam masala
- as Required Water
- as required Coriander leaves for garnish
- For kheer refer
- (add sugar/ jaggery as sweetner, this time I have used sugar)
- (Adjust sugar as per your taste)
Instructions to make to make Poori- aloo curry and kheer
- (Steps for making poori)
In a parath, take wheat flour, salt, sooji and mix.
Add oil and mix.
Next gradually add water and knead a semi soft dough.
Cover and keep aside for resting.
Upon resting the dough will become softer. - Meanwhile prepare the masala paste with the above-mentioned ingredients.
Next place a kadhai. Heat oil. Splutter cumin seeds. Add a dash of hing.
Next put the prepared masala paste.

- Cook the masala paste till it leaves oil.
Next add the diced boiled potatoes and little water.
Mix. Let it be on slow flame for some time.
Next add salt as needed and sugar. Mix. Flame must be medium.
As the flavours combine well with each other, put garam masala.
Give a mix.
Put finely chopped coriander leaves and mix.


- Cook till the required consistency.

- It's ready... serve hot with poori.
For poori...
Take the rested dough, knead it once again. Divide into small portions.
On a rolling board, place the portion and roll it.
Side by side heat oil. Put pooris for frying at medium to high heat.
When done... strain...
Serve hot hot with aloo curry and kheer...
