  1. 1 kg Mutton Bone-in
  2. 1 tsp Dry Ginger powder or Sonth
  3. 3-4 tsp Kashmiri Red Chilli powder
  4. 300 gm Curd
  5. 2 Bay Leaves
  6. 3-4 Cloves
  7. 2 Bay Leaves
  8. 1/2 cup Oil (preferably Mustard)
  9. 2 Green Cardamoms crushed
  10. 1 Black Cardamom or Badi Elaichi crushed
  11. 1 tsp Cumin Seeds
  12. 2 tsp Fennel powder
  13. 1 tsp Garam Masala
  14. 2 tsp Salt

Instructions to make to make Kashmiri Lamb Rogan Josh

  1. In a Pressure Cooker, heat Mustard Oil to a smoking point. Add Cumin Seeds, Bay Leaves and both the Cardamoms slightly crushed. Saute for a minute.
  2. Now add the Lamb Bone-in pieces and sear for about 4-5 minutes on a low heat. After the stipulated time, now add the Ginger powder as well as the Kashmiri Red Chilli powder. Mix well and cook for a minute more.
  3. Now add in Salt and the Fennel powder. Also add in whisked Curd. Heat should be low. Next add about 2 cups of water. Pressure cook for about 6 whistles or as required. Traditionally it's slow cooked on a stovetop for a lovely texture and flavour. But I have opted to pressure cook this time.
  4. After the pressure settles down on it's own, open the lid. Adjust salt if required. Add in Garam Masala and that's it. Give it a final stir. Simmer for a few minutes or to say about 5 minutes in all.
  5. It's all ready to be dished out and relished with Naans or Parathas. Or even any Pulao of your choice. Enjoy! Yum!
